As I sit and ponder why I haven't been posting anything lately, I'm drinking my morning coffee while listening to Christmas music in June and watching the rain come down outside my window. {Sigh} No, that doesn't mean I miss winter. Far from it. What I enjoy is dry{?}, springtime weather. But it is now summer and I find myself inside where it is air conditioned instead of being outdoors. At work I will do what I have to and then come back inside long enough to cool off, then back outside to continue cleaning the parking lot. In case I haven't mentioned it before now, I work maintenance at a local large outlet mall. On the plus side, I do get a little bit of a tan. lol. By now your probably wondering when I'll be done with Mom's last book. It's a combination of being longer than I thought and yes, {I'll admit it} I can be a procrastinator sometimes. There, I said it. My secret is out. Please don't hate me. lol. It's something that all writers have to overcome. Yeah,that sounds good. Wow! Did I just type that? Okay, okay. But in my defense I actually HAVE been sitting down the past couple days working on it. Not all day like I would like to. That has happened a few times. Sometimes I DO have to go to the bathroom, eat, etc, etc... So to get your forgiveness, what I would like to do is interract with you by sharing recipes or anything else that you would like to discuss. To start off with, here is a delicious summer time strawberry dessert. Enjoy! Pretzel Salad 1st layer 2 C crushed pretzels 3/4 c. melted margarine 3 T. sugar 2nd layer 1 - 8 oz. pckg cream cheese 1 C sugar 2C whipped topping ( small container) 3rd layer 1 L pkg. ( 6 oz.) strawberry flavored gelatin 2 C. boiling water 1 (10 oz.) box frozen strawberries Preheat oven to 400. Put first layer in rectangular pan. Bake 8 minutes. Cool. Beat sugar into cheese, stir in whip topping. Spread over cooled pretzels. Mix gelatin, boiling water and berries together. Set aside 10 minutes. Pour over cheese mixture, chill. |
